Fruity Muffins Recipe

For about 12 muffins:

2 cups flour
4 teaspoons baking powder
½ teaspoon salt?
½ cup castor sugar
100 gm butter
1 cup milk
1 egg
1-1½ cups blackberries or blueberries or chopped banana or ¾ cup sultanas or ½ cup blackcurrants or ¼ cup chopped walnuts

Topping: (not necessary)
1 tablespoon sugar )
½ teaspoon cinnamon)

Sieve the first three dry ingredients into a fairly large bowl.
Add the castor sugar.

In another container melt the butter, remove from the heat. Then add the milk and egg, and beat to combine these three.

Prepare the fruit, then tip the liquid, fruit, and nuts into the bowl with the dry ingredients. Fold everything together, taking great care not to over mix.
The flour should be dampened, but the mixture should not be smooth.

Butter or oil 12 deep muffin pans thoroughly. Without stirring or extra mixing,
place spoonfuls of mixture into pans, filling each half to three-quarters full.

Combine the second measure of sugar with the cinnamon and sprinkle over the muffins before baking.Bake at 220 degrees Celsius for about 12-15 minutes, until muffins spring back when pressed in the centre.Remove from the oven, stand for 2-3 minutes, then twist muffins carefully to loosen before lifting them from their pans.
Place on wire rack to cool.
